Ingredients
Cooked Chicken
2 Cups Peeled and Cubed Mango
1 Can Black Beans (Rinsed)
1 Cup Frozen Corn (Thawed)
1/2 Cup Raisins
2 Serrano Peppers Seeded and Chopped (or whatever kind of pepper you want, I used anaheim)
1/4 Cup Chopped Cilantro
1/4 Cup Orange Juice
2 T Lime Juice
1 T Vinegar
2 Garlic Cloves Minced
2 tsp Ground Red Pepper
1/4 tsp Sugar
1/4 tsp Salt
12 Tortilla Shells
Preparation
- Dice Fruits and Veggies
- Combine all ingredients in large bowl or freezer bag.
From here you can make your wraps by spreading the mixture on to your tortillas and wrapping them burrito style or you can put in large zip lock bag to assemble on site.
