Cajun Meatballs

Servings: 12

Ingredients

1 pound Jimmy Dean Original sausage

1 pound skinless, boneless chicken

1 egg

1 medium onion

1 clove garlic

1 small bunch green onions

½ teaspoon black pepper

1 teaspoon Worcestershire sauce

½ teaspoon liquid smoke

1 small cayenne pepper or ½ teaspoon Tobasco sauce

1 to 1 ½ cup bread crumbs

Preparation

Mix first six ingredients using a food grinder with the small hole grinding plate into a tub or bowl.  Add last 5 ingredients.  Mix by hand until well blended.  Add enough bread crumbs so entire mix is stiff enough to make into a large ball.  Run through grinder again using the large hole grinding plate.  Should look like the included photo coming out of the grinder.  Make small ¾ to 1 inch meatballs.  Place meatballs on wax paper on a cookie sheet and put in freezer overnight.  After the meatballs are frozen they can be placed in zip lock bags for storage or transport.  To cook, place frozen meatballs in a 12 or 14 inch Dutch oven and place 6 briquettes under the oven and 20 on the lid.  Cook for 45 minutes to 1 hour.  Check with meat thermometer to verify meat temperature is at least 165° F.   Serve as an appetizer or mixed with other foods… pasta, sauces, on bread, etc.
